Broccoli Stir ‘Unfry’

Wanted to create a new dish from a cooked dish which I find fun to do!!!When I started this recipe I had something else in mind, but just went with the flow!This is very quick and easy to do.  What I also found is you can eat it immediately, or let it marinade for a few hours. I eve left it overnight for my lunch the next day and it was still yummy!!  You can use a veggie rice with this, or rice or an alternative like millet, or quinoa.

Broccoli Stir ‘Unfry’

-1 head broccoli

-4 -5 mushroom

-1/2 zucchini

-1 red pepper

Marinade

2 oz cold pressed sesame oil

1 oz cold pressed olive oil

1 oz braggs or nama shoyu or alternative (tamari)

juice of 1/2 lemon

1 clove garlic

Mix up marinade and set aside.

Cut up veggies as you like, chunky or not.

Pour marinade over and mix well, and this is where you can let it sit for a couple of hours or not.

I threw in about 1 tbsp of black sesame seeds and mixed well.

Veggie Rice

1/4 head of cauliflower broken up in chunks and put in processor and processed until fine. You can also use parnips.

After you have let the veggies marinade for the time you want or not, pour the veggies over the veggie rice, or rice or whatever you are using.

Eat and enjoy!!!
