Warm Veggie Soup

After the holidays it’s nice to start eating a little healthier again and a nice warming soup helps with both!!

It’s good to get a variety of different veggies and fruits in your diet right now, actually as often as possible.

The soup I made today was quick and easy and tasty!!

This recipe served 2, so you can reduce it or keep it as it is.

2 stalks celery chopped up

1 carrot chopped up

1/2 of a big beet chopped

2 cloves garlic

juice of 1/2 lemon

pinch sea salt

aprox 1 tbsp dulse

1 average size avocado

water (oops I forgot to measure it – but depending on how thick or creamy like you like it will determine how much water, so start off with a little and add more) I also boiled the water then let it sit for a few minutes and cool down a bit and added it in the blender with all the ingredients listed above, it’s nice to have it warmer when it’s cold or raining outside.

I added in some chili peppers for some extra zing, but that is optinal!!

Blend up till smooth and the desired thickness,  add any other spices you would like to taste, serve immediately and enjoy.  It’s always good with some raw crackers too!!

    1. Dulse is a seaweed loaded with lots of nutrients and minerals, you can get it at a health food store near you or even possibly your local grocery store.
