Challenging Self

Challenging Self

Do days go by, or weeks maybe even years……and you find yourself doing the same old same old?

Are you happy doing what you’re doing?

Do you drive the same way to work, eat the same breakfast or lunch every day, or is every Tuesday chicken and rice night, you know what I mean??

Took a little trip down to Florida for a few weeks, had some r & r, good times and my sister, Steph, and I decided to try Para Gliding…..something I always wanted to do. She asked and we were in the pick up van within 15 mins on our way.

If you ever thought about doing it….DO IT!!!!

Us taking off.

Going up higher and farther away!!

Higher still!!!

Looking down……ok I will admit, the people that went up before us and when I saw how high up they were, I got thinking WTH??

But I didn’t let that stop me, besides 5 kids way younger than me did it!!

It was so calm, quiet and peaceful up there it was amazing!!

YES it was fun!!!

Do I look scared??

How can you challenge yourself today?

Or would you just like to add it to your bucket list??

Have a beautiful day!!

Juicy Living

Juicy Living

Juicy Living

What does Juicy Living mean to you?

Are you bored? Doing the same old same old? Going the same way to work each day? Eating the same foods every day? Watching the same tv shows? Are you really living the life you want to?

What thing could you do differently to shake up the routine?  We create habits whether good or bad and we keep them.  Part of living, part of growing is stepping out and making changes.  We are either growing or dying?

How could you put a little more juice into your life besides just food?

Do something different today, start making little changes……just think where you could be in a year if you did something different each day?

Stretch yourself, go past your limits, laugh more, love more, and make it your best day yet!!!!

Marinated Portabella Mushroom

Marinated Portabella Mushroom with Creamy Dill Sauce – RAW!!

This is a fairly easy dish to make, it does require some marinating and a dehydrator.  If you don’t have a dehydrator you could use our oven at the lowest temperature.  Just remember anything heated over 115degrees usually gets cooked and it’s not raw then.

I used smaller sized Portabella Mushrooms in this recipes, but bigger ones can be used to, you just might need to substitute more marinade.

– 4 Portabella Mushrooms (small ones are still a good size) this served 2 people

– 3 tbsp cold pressed olive oil

– juice 1/2 lemon

– 2 tsp Tamari

– 1 organic Garlic minced

Mix all together in a bowl and add mushrooms, making sure they are coasted.  Toss or stir every so often, leave to marinate for 2 – 3 hours.

Once marinated, place in dehydrator and dehydrate for 4 – 5 hours.

Marinated & Dehydrated sliced mushroom.

Creamy Dill Sauce

– 1 cup raw Cashews

– 4 oz Water

– juice 1/2 Lemon

– 1 organic Garlic clove

– 1/2 tsp Celtic Sea Salt

– 1/4 – 1/2 cup organic Dill

Throw all ingredients into your Vitamix (blender or processor) and blend well until smooth.  A little more water may be added for desired consistency.  As you can tell I made my sauce a little on the thick side with just 4 oz of water.

Slice up Mushroom and place on plate and pour Creamy Dill Sauce on top, I added a little more dill which is optional.  This could also go on Zucchini noodles, pasta or rice but it tastes great on it’s own!!

This I served with a Quinoa Salad which the recipe will follow.

Dare to Stand Out

We went up and spent the day in Whistler the other day and this couple really caught not only my attention but many others as well.

I thought how cool and if more of us couldn’t be like that……Dare to Stand out instead of following the status quo all the time or trying to keep up with the Jone’s……who are they anyways??

Sometimes that is going against what everyone else thinks, or playing safe or worrying about what other people will think.

Sometimes it’s really about tuning in to who we really are or need.  Listening to that gut instinct.

I had that recently.  That strong gut feeling that if I did something or went to to this place it wouldn’t be good for me or wasn’t in my best interest or whatever.  See, sometimes our human minds try to figure ‘it’ out, but we can’t always.  Every time I had this strong feeling in my gut and listen to it, it became very clear later on why and when I didn’t listen to it….oh boy lets not go there!!

This time I did listen to it, which I really try and do more and more.  It kept bugging me if we were to go away to this place to meet these people.  It was a strong feeling of don’t go.  So I didn’t, and I soon found out why and was very glad I didn’t go and in the end these people ended up not being such good friends after all.

When it involves other people, it doesn’t mean they are bad people or anything like that, they may just not be good for you or at that time in your life.

Sometimes in your life, it may mean going against what everyone else is saying or doing…..always honor that inside of you.  It’s in all of us, but we get so busy in life or trying to figure things out or in between our 60 000 plus thoughts a day maybe don’t even want to have to think about it!!

Dare to Stand Out if you have to or be different… really do win in the long run, no matter what they may say.  It is your life anyways isn’t it???

To the Market We Go…..

Don’t you just love summer?? Well it is finally here, July wasn’t so great, but August feels like summer finally!!!
One of the reasons, and there are many, but just one reason why I love summer is the markets…….I love seeing all the fresh foods.

I takes me back to my childhood when I was little growing up in Ontario and my grandparents and great grandparents had a huge garden.  I spent many afternoons there playing as my mom and grandmother picked and picked so we could eat fresh food, little did we know at the time organic… freezing and canning it for the winter months.

It is so much easier to eat healthier in the summer months when we can either grow our own food or support our local farmers and head to the market.  Its great to see what is really in season as well and mix things up accordingly.

You can try many different salads with lots of different herbs.

Make a Zucchini Pasta and mix it up to your liking……getting more ‘raw’ into your summer!!

Great time to stock up on fresh organic garlic and Basil is abundant as well, so Pesto is good to make too and will keep in the fridge for a little while.

Berries are also in season so for anyone making shakes add those berries and lots of them!!!

I got this for our salad Saturday night, and treated myself to some nice fresh raw chevre cheese and added some herbs with a little olive oil and balsamic vinegar and it was nice, and yes a nice glass of wine too!! 🙂

So go out and support your local farmers, change it up somewhat and eat what is fresh and in season cause it’s so yummy and healthy!!!

Herb Salad

Herb Salad

Quick, Easy & Tasty

–  1 head of Red Leaf Lettuce

– handful or more of finely chopped Parsley, Dill & Basil (I used Cilantro here but use any herbs that you love)

– 1 Red Pepper cut up

-1 Tomato  cut up

or both

Squeeze fresh Lemon juice and sprinkle cold pressed Olive Oil

Depending on how many people you are going to serve is how much you will add (if you use a whole head of lettuce or part of it).  Make extra to take for your lunch the next day if need be.

Chocolate Strawberry Macaroons

Who said you can’t eat sweets and they be healthy as well.

Chocolate Strawberry Macaroons

–  2 cups Dried Coconut

–  1/2 cup Brown Rice flour

–  1/4 cup ground Flax

–  1/2 cup Honey

–  1 tsp Vanilla

–  Pinch Sea Salt

–  1 cup diced Strawberries

Mix all ingredients together except for diced Strawberries, when well mixed stir in strawberries.

Roll into balls and place on teflex sheets on shelves in dehydrator and dehydrate for 5 – 7 hrs.  Remove the teflex sheets after approximately 3 – 5 hours.

–  1/4 cup Cacao Butter

–  1/2 cup Cacao Powder

–  1/2 cup Honey

–  1 tsp Vanilla

pinch Sea Salt

You can either dip the macaroons in the chocolate or drizzle over them.  Chill and keep in fridge for best results.

Veggie Seaweed Pasta

Here is another idea to use the Zucchini Pasta Noodles. This is great as a dish itself or a side dish for even those non vegetarians!!  Be creative if you want and use other veggies too, or even let in sit for a little bit and marinate in the oil before adding to the pasta.

Veggie Seaweed Pasta

1 tsp Wakame dried and put into a bowl with water to plump up

I got this package in Chinatown, but most health food stores carry it as well.  Here it is dried and then once it has soaked for about 5 minutes, so it doesn’t take long.  This is the seaweed that comes in miso soup and has a lot of nutritional value, for instance Vitamins A, B1, B2, B3, B5, C, E, K, folate and soluble/insoluble fibre, and has among the very highest nutrient-to-calorie ratios (from a vegetarian source) of anti-inflammatory Omega-3 Essential Fatty Acid (EPA). The salty taste is not just salt but a balanced, chelated combination of sodium, potassium, calcium, magnesium, phosphorous, iron and trace minerals.

–  1 Tomato chopped

–  1 cup Spinach chopped up

–  2 mushrooms chopped into small pieces

–  1 Green Onion thinly sliced

–  1 Red pepper chopped up into small pieces

–  1/4 cup Parsley finely chopped up

–  1 Garlic clove minced

Put all ingredients in a bowl and add approximately 4 Tbsp of Toasted Sesame Seed Oil and also cold pressed Olive Oil and mix together.

Add in the Zucchini Pasta or put on top and enjoy!!
