Raw 'Meatless' Meat

I talk about this recipe in the video to follow.  The other night everyonein my house wanted fajita’s, which I do love, but since committing to as much raw or live foods as possible I wanted to get even more creative and this is what I came up with.

I am one that gets ideas from cook books (or I should say “un” cook books!!!) and then play with it.  I love doing that.  Now some people may like to follow recipes to a ‘t’, just remember you can always adjust things to your taste or substitute some ingredients for others for different flavors…….have fun, be healthy and remember, it’s your palate and as you eat fresher, more alive foods, your taste will change.

Raw ‘Meatless’ Taco Meat

In a processor combine

1 cup sunflower seeds (the best for making a meat like texture or more course)

14 – 1/2 cup walnuts

Pulverize till fairly course

Add

squeeze of 1/2 lemon

celtic sea salt to taste

1 clove garlic

1 tsp cumin (optional)

bunch parlsey (or cilantro, basil or other herb)

You can also add any flavorings you like as well, like chili peppers, cayene pepper,curry etc

Mix up well

You can use this to substitute in tacos (whether it’s a corn shell or cabbage leave or a wrap), put in celery, on crackers etc

Pesto Sauce

Raw Pesto Sauce

I was at the market the other day and there was an abundance of Basil and fresh Garlic – perfect for making pesto.

2 bunches basil leaves (no stems)

2 – 3 garlic cloves

squeeze of 1/2 lemon

3/4 cup cold pressed olive oil

nuts are optional, I usually use them, but you don’t have to. Traditional pesto called for pine nuts, but you can also mix them up. I have used pumpkin seeds, macadamia nuts and walnuts, you don’t have to soak them, it is up to you, I usually don’t.

Put all ingredients into a food processor and blend up until mixed well.  You can make it very smooth or a little more course.  You can add more olive oil for less concentrate.  I usually make it somewhat concentrate then depending on the dish I can add more oil if need be.

This is great for pastas, (regular and raw), crackers, dressing etc

Why Orgnic??

A word on Organic

You are what you eat and your skin is the largest organ of the body, everything you put on it gets absorbed into the bloodstream, so for me, if I am going to eat healthy, raw and organic as often as possible, then I want to put healthy products on my skin as well.

We already get exposed to enough toxic chemicals and if we have a chance to reduce that, why not??

Foods and products that are organic are not gentically modified (GMO), don’t have pesiticides, herbicides and other chemicals.  These chemcials can be detrimental to your health and are usually cancer causing.

Organic foods and products reduces overall toxins in your body further increasing your health and vitality. They are more nutritious, safer, have more vitamins and minerals and are better tasting.

I find everytime I go to the store and try and find a safe, healthy or organic product, reading the labels is quite amusing to say the least!!  I don’t know what the guidelines are but to put on the labels nautral or organic and to find out they still have toxic chemcials in them can be  frustrating!!

These are some foods that have high amounts of pesticides, growth hormones, antibiotics etc

– beef, chicken & pork

– dairy

– strawberries, raspberries and cherries

– apples and pears

– tomatoes

– spinach and salad greens

– peaches and nectarines

– coffee

– potatoes

– grapes (imported from Chile)

– celery

– peppers red and green

Organic may be more expensive, but for me, I feel it’s worth it.  A good way of getting fresh, organic and usually well priced produce is through your local organic farmer or at farmer’s markets, buy from organic co-ops, buy in bulk or decide on what you can or will buy that is organic, it’s not always alot more money especially if it’s in season.

I have found that I can actually taste the difference, but I know I am feeding my body better.

Spaghetti Pie

I couldn’t find the original recipe for this one, so I made it off the top of my head last night for dinner, and it ended up tasting good, even my husband ate it!! (And no, he’s not a raw foodie, but will eat what I make and give me honest feed back!!!)
I also need to get a good digtial camera instead of my little pocket one, you couldn’t tell I used to be a photograher with this one!!! lol
Spaghetti Pie

3 Steps

– 6-8 carrots depending on the size cut up in chunks for the processor
– 1 cup walnuts
– 1-2 cloves garlice
sea salt to taste
squeeze of lemon juice
– 1/4 cup water ( may need a little more adjust accordingly)
Process together untila nice mixture, moist and smooth and put in bottom of glass pan

2-3 Avocados depending on size
Mash into bowl and add sea salt, 1-2 cloves garlic and juice of 1/2 lemon
Mix together, adjust to taste

Spread over carrot mixture in pan

Peel 2 – 3 Zucchinis and if you don’t have a spiroli to make pasta like noodles, any type of shredder will do (cheese shredder) to make a pasta like noodles from the zucchini
Grate the zucchinis
I don’t use the centers of the zucchini, I save those to mix in with other veggies for my dog, but you can if you like
place the pasta like zuccini on top of the avaocado spread
Garnish with chopped green onions or parsley or basil or cilantro or whatever else you would like,
a little sprinkle of a nut cheese too is optional

If you want, you can add in herbs to the carrots mixture as well, play with it and always remember, when dealing with fresh, raw foods, the taste may change each time so experiment and don’t be afraid to add more salt or lemon or herbs or even less!!
