Love the summer months when everything is fresh and easy to eat more raw foods, more vegan foods and it tastes even better as most of it can be grown in your area – yummy!!

I love this recipe – and it can be changed up a few different ways, but here is one to get you started. This recipe is pretty quick and easy and of course tasty too – don’t be afraid to adjust amounts of things for your taste or add in some different herbs or spices.

 

Taco Filling

–    1 cup raw Walnuts

–    ½ cup fresh Parsley

–    1 tbsp Braggs or Tamari

–     1/2 cup fresh Cilantro (if you really don’t like Cilantro use Parsley)

–      juice of 1/2 Lemon

–       1 minced Garlic clove

Raw Tacos

 

Throw all ingredients into a food processor and process until desired consistency (you can leave it rather chunky or more smooth which just needs more processing – I usually go in the middle somewhere so there is a little bit of chunks of nut)

 

For these tacos I used the outer (as they are usually bigger) of Green Cabbage leaves

 

I chopped up some extra Cilantro, chopped Tomatoes, sliced Avocados, added a little Hot Sauce and topped with Alfalfa Sprouts and rolled it up.

Healthy eating doesn’t get much easier – enjoy!

Chocolate Hazelnut Ice Cream- Raw / Vegan

Wow – loving the summertime!! So much fun in the sun, markets, beach, dancing to the drums as the sunsets on the beach – what a view, street markets and events, gatherings and well I could go on.  Oh and a little work in there too!! 🙂 Love summer, it’s been hot, making sure I am drinking lots of good water )fresh from the spring in North Vancouver) and it’s a good time for ice cream – raw / vegan style.

This Chocolate Hazelnut Ice Cream is easy to make, I think pretty tasty too and it makes eating healthy pretty easy to do, not too mention raw & vegan – you won’t feel like you are missing anything!!  It’s a sweet treat but a healthier version and in this heat – we like cold treats!

Ban Hazelnut_-3

–  5 frozen Bananas

–  ½ cup Hazelnuts

–  2 tbsp raw Cacao

– Throw all ingredients in a processor or blender and blend until well mixed and smooth, make taking scraping down the sides often.

At the very end of when being served sprinkle on some raw cacao nibs – eat and enjoy!!  Can be kept in a covered container in the freezer for a few days if you are not going to eat right away or this recipe makes2 – 4 servings depending on the amount you serve in a dish!!

With this weather of summer finally being here it is so easy to eat more raw foods, eat healthier, eat fresh and fast- not that we want to eat fast but fresh, natural food really is fast food as it’s best!!

Today is also International Raw Day – so get some more raw foods into your beautiful body!!!

–  1 cup julienne Green Zucchini

–  1 cup julienne Yellow Zucchini (or called also Summer Squash)

–  1 cup chopped Parsley

–  1/2 cup chopped Chives

Add in

–  4 tbsp raw Pumpkin Seed oil (optional but oh so flavorful – I just found this amazing tasting raw, cold pressed oil a short time ago and fell in love with it – it is very nutritious but also tasty and adds a beautiful flavor, if you are unable to find it or have other oils on hand like Olive oil it will work – you may want to add another herb or more garlic for a little more flavor)

–  2 tbsp White wine Vinegar

–  2 cloves Garlic minced

Pinch Salt and Pepper

–  3 tbsp Pine nuts (optional you can roast / toast these – I didn’t for this recipe)

This is so tasty you won’t be feeling guilty!!  And when you use real raw cacao – it has nutritional benefits – not that that gives you the excuse to eat it all the time or tons of it.  To think that healthy, nutritional things can actually be really tasty and easy to make – well makes life more fun I think!! 🙂  This is raw and vegan – but you wouldn’t know it!!

Chia has been around for a very long time – it was used  for centuries by the Aztecs of Mexico and the Indians of the Southwest of America, these tiny seeds formed part of their staple diet.  Aztec warriors were said to use Chia to as a high energy ‘supplement’ on their conquest.

Google Chia as there are many stories on it since it’s been around for so long and it has many health benefits – especially again a good source of protein and omega-3 oils, a lot of nutrients, antioxidants and fiber.  Not bad for a tiny little thing!!

Due to their antioxidant qualities, chia seeds don’t go rancid as quickly as flaxseeds do. Store Chia in a glass jar or in a sealed container to help keep it longer.  Ground chia seeds should be placed in a container with a tight-fitting lid, and may also keep a month or more.

You can add Chia to many things but when you add it to a liquid remember it will become gelatenous – therefore can make good puddings or thickener!!

–  2 tbsp Chia seed in 1 cup water and let soak for at least an hour – the longer the better as the softer the seed becomes but it will work with an hour.  It will become gelatenous and I did add a little more water to mine as it got a bit too thick, add up to 1/2 cup more of water if it is too thick

–  3 tbsp raw Cacao Powder

–  4 tbsp Agave (or Honey or Brown Rice syrup)

–  1 Avocado (or you can also use 2 Bananas or 1 peeled Mango)

the fruit will make it a little more sweet than the Avocado so you can always cut the sweetener back a tbsp

–  1 tsp Vanilla

Once the Chia has soaked for at least an hour, throw all ingredients into a Vitamix or Blender and blend until smooth.

If you are going to serve it right away, throw in 2-3 ice cubes to make it cooler.

What I had for breakfast today was the pudding with the Cashew Whip and a cut up Banana, Blueberries and Strawberries

Yummy – what a great way to start the day!!!

What the heck – raw popcorn??

It’s probably not what you think!!

One of the things I do love is popcorn especially with a really good movie – which I don’t do often so it’s a treat.  I always make sure its Organic so it’s non-gmo as corn is high on that list.

This though is a really good, nutritious and tasty treat substituting for popcorn that lets face it is just totally healthier period.   It’s raw (not everyone agrees on nutritional yeast being raw) but totally vegan and gluten free for sure!!

When I used to go to the movies at a theatre it was a big treat for me to get popcorn and I would get a large and eat it myself – yes I do love popcorn!! Since cleaning up my way of eating, the last time I went to a real movie theatre and ate popcorn I felt it for 2 days in my system and felt horrible – bloated and just yucky – I seem to be more sensitive to chemical crap since cleaning things up lesson learned!!

My daughter came home this past winter after being at the movies and a couple of days later said the same thing to me – I try hard not to inflict my judgments on my kids so it was kind of neat to hear her say that and that she wouldn’t be eating popcorn at the movies again – which she hasn’t and she loves popcorn as much as I do!!

If you love popcorn too hope you enjoy this way – you may not the first time but it does grow on you!!

–  1 head Cauliflower chopped into small pieces

–  Himalayan Sea Salt

–  1 – 11/2 tbsp Nutritional Yeast (good for B vit’s and found in health Food Stores and a lot of grocery stores now)

– 1 tsp Spirulina (optional) Purium’s Spirulina

Put cut up cauliflower into a big zip lock bag and add in sea salt, nutritional yeast and spirulina (optional) shake till well coated.

Both are shown in the bag here – one with Spirulina and one without it.

Raw Popcorn

Put into a bowl and grab a cool drink and a good movie, eat and enjoy!!

It’s also a very good snacking treat if you are needing a mid afternoon snack or too busy working – will keep in fridge for a couple of days in sealed bag as well!!

Where I started with this recipe and where I ended up truly surprised me but in a very good way!

I love surprises especially when they taste good! 🙂

That is what is fun or cool when you are using fresh, real ingredients – don’t be afraid to explore or if it’s not as tasty to your liking add a little something here or there or a little more.

And Green – kind of bright but oh so healthy and tasty making healthy eating or eating healthy easy!!

This is a Vegan, Gluten free and basically Raw recipe (Nutritional yeast may not be considered ‘raw’)

–  1 cup Cashews – soaked for about an hour or longer (this helps to softens them, if you don’t have the time for this it’s not totally necessary)

– 1 clove Garlic

–  juice of 1 Lemon

–  Salt to taste

– 1 tbsp Nutritional Yeast

–  1/2 – 3/4 cup Water (less for a thicker dip or more water for more of a sauce type)

–  1 tsp Greens (Purium’s Power of 10 Veggie) – this is optional, it tastes good without it but this does add flavor and tons of nutrition easily

Put all ingredients into a Vitamix or blender and blend until smooth

Add in Spinach – for this recipe I added in a small container full of Spinach – you can leave some till the end and finely chop the spinach for a more textured dip.

Add in Dill – I used approximately 3 tbsp of fresh dill.

Blend until smooth or desired consistency is achieved.

Once I got the consistency I wanted I added in a small (my hands are small :)) handful of Cashews and lightly blended giving the dip some texture but this is not necessary.

 

If you want to have more dill flavor or just some herb showing, finely chop Dill and stir in at the last moment.

You can use it as a dip for lots of veggies or crackers.

I love Avocados no matter how they are served.  I also love Chipolte Mayo too but wanted to create a raw / vegan one – almost tastes as good as the real deal but oh so much healthier!! :0

These are not only vegan but also raw (therefore gluten free too!!)

Good snack, meal or side dish!

Stuffed Avocados

Avocados Stuffing

– 1/2 cup finely chopped Celery

– 1/2 cup chopped Parsley

– 1/2 cup Sunflower Seeds

– 1 Green Onion finely chopped

– 1 Red Pepper finely chopped

– 1 small Cucumber finely chopped

Mix together in a bowl and add in Chipolte Mayo approx 1/2 – 1 cup (to your liking) – recipe follows

Approx 3 Avocados – cut in half and set aside when mixture is complete spoon in to cut halves and enjoy!!

– 1 cup Cashews ( can soak in water for approx 15 mins or while cutting and mixing other ingredients)

– 2 tbsp Olive oil

–  juice of 1 Lemon

– 1 clove Garlic

– pinch of  Sea Salt

– 2 tsp Chipolte seasoning

– 1/2 cup water (approx depending on how thin or thick you would like it)

Throw all ingredients in Vitamix or blender slowly pouring in water and mix until smooth and desired consistency is achieved.

Serve, Eat & Enjoy!!

This is fairly quick and easy ad very filling!!  It can be used as a main or as a side either served whole or cut in half.

This recipe will fill 3 medium sized peppers.

– 1 cup Sunflower seeds coarsely chopped in food processor as above

Mix together in a bowl-

–  1 Carrot shredded (1 cup worth)

–  1 Tomato finely chopped

–  1/4 cup finely chopped Cilantro

–  2 cloves Garlic minced

–  1 tbsp Tamari

–  juice of 1/2 Lemon & 1/2 Lime

– pinch Sea salt

Mix all together.  Add in processed Sunflower seeds and mix well.

Chop up 1 Avocado into smaller chunks and gently stir in to mixture.

Cut tops of red Peppers off and clean out the insides and all seeds.  Once done, fill with mixture and serve as is or cut in half.

How’s that for fast food!!??

– 1 cup Pecans or Walnuts
– 4- 6 Madjool Dates ( or raisins approx 1/4 cup)
can adjust for sweetness
Put into processor and blend up till crumbly. What is left over (if any) can be stored in a container and kept in the fridge.

Cut up 1 apple in a bowl (or several if more than one person) and sprinkle nut mixture over top.
Eat and enjoy!!!

Recipe

–  1/2 cup Cashews

–  4 Roma Tomatoes chopped into big chunks

–  1 Red Pepper cut into big chunks

–  1/2 cup Basil

–  1/2 cup water

–  4 cloves Garlic cut up into big pieces

–  2 tbsp cold pressed Olive Oil ( optional – I didn’t add this in i the video but i did after and I thought it gave a taste, without it it tastes more fresh if that makes sense)

–  pinch Sea Salt

Through everything into the Vitamix, blender or processor and blend until smooth, adjust amounts for taste.  Good on Zucchini pasta or any other type of pasta.

Quinoa & Collard Greens

Quinoa & Collard Greens

Quinoa is an ancient grain from South America used for many years by the Incas.  It is high in protein, a complete protein, which is great for vegetarians or vegans and a very good source of iron. 🙂  This is a Quinoa salad that can be eaten on it’s own, as a side dish or wrapped with greens like Collard greens which are full of many nutrients and health benefits.

–  1 cup Quinoa  (1 cup that has been cooked in 2 cups of water so the end result will be more than 1 cup of cooked Quinoa)

–  3 oz cold pressed Olive Oil

–  1 – 2 oz Bragg’s, Tamari or Nama Shoyu

–  juice of 1/2 Lemon

–  2 Garlic cloves minced

–  pinch Sea Salt

–  1 cup Spinach chopped up

–  handful of Parsley finely chopped

–  1 grated Carrot

–  1 grated Beet

–  1 Green Onion finely chopped

– 4-6 Black Olives chopped

Mix all ingredients together well.

Collard Greens are usually a fairly good size so they work very well as a wrap.  The stem though is quite big and course so I recommend cutting it off up into the green somewhat.  When you wrap it around the salad to make it hold better you will probably have to fold one side of it, as you will see in the next photo and the thicker part of the stem will break.

These make a great lunch and are packed full of good things, so eat and enjoy!!  I even sliced up a little avocado in one of mine which was even yummier!!
