Broccoli Stir ‘Unfry’

Wanted to create a new dish from a cooked dish which I find fun to do!!!When I started this recipe I had something else in mind, but just went with the flow!This is very quick and easy to do.  What I also found is you can eat it immediately, or let it marinade for a few hours. I eve left it overnight for my lunch the next day and it was still yummy!!  You can use a veggie rice with this, or rice or an alternative like millet, or quinoa.

Broccoli Stir ‘Unfry’

-1 head broccoli

-4 -5 mushroom

-1/2 zucchini

-1 red pepper

Marinade

2 oz cold pressed sesame oil

1 oz cold pressed olive oil

1 oz braggs or nama shoyu or alternative (tamari)

juice of 1/2 lemon

1 clove garlic

Mix up marinade and set aside.

Cut up veggies as you like, chunky or not.

Pour marinade over and mix well, and this is where you can let it sit for a couple of hours or not.

I threw in about 1 tbsp of black sesame seeds and mixed well.

Veggie Rice

1/4 head of cauliflower broken up in chunks and put in processor and processed until fine. You can also use parnips.

After you have let the veggies marinade for the time you want or not, pour the veggies over the veggie rice, or rice or whatever you are using.

Eat and enjoy!!!


Veggie Soup

Warm Veggie Soup

After the holidays it’s nice to start eating a little healthier again and a nice warming soup helps with both!!

It’s good to get a variety of different veggies and fruits in your diet right now, actually as often as possible.

The soup I made today was quick and easy and tasty!!

This recipe served 2, so you can reduce it or keep it as it is.

2 stalks celery chopped up

1 carrot chopped up

1/2 of a big beet chopped

2 cloves garlic

juice of 1/2 lemon

pinch sea salt

aprox 1 tbsp dulse

1 average size avocado

water (oops I forgot to measure it – but depending on how thick or creamy like you like it will determine how much water, so start off with a little and add more) I also boiled the water then let it sit for a few minutes and cool down a bit and added it in the blender with all the ingredients listed above, it’s nice to have it warmer when it’s cold or raining outside.

I added in some chili peppers for some extra zing, but that is optinal!!

Blend up till smooth and the desired thickness,  add any other spices you would like to taste, serve immediately and enjoy.  It’s always good with some raw crackers too!!

Chocolate, Banana & Coconut Smoothie

I seem to be on a Chocolate theme this month, so I’ve added in with my smoothie too!!

Maybe it’s because for the first time I have not been baking up all the treats I usually do!!  I was in the big city the other day and not only did I find young coconuts but a big sale on them as well,  so todays smoothie does have coconut meat in it, which is very good for us, but you don’t have to use it if it’s not available to you.

Chocolate, Banana & Coconut Smoothie

2 Bananas

2 handfuls Spinach

Flesh of young coconut (optional – if you don’t have or want to use Coconut just add more

almond milk)

Almond Milk

1 – 2 Tbsps Raw Cacao Nibs or Powder

Blend up until smooth, makes 2 servings so share with a friend and enjoy!!

Extras

I sometimes add in other things to get more from my smoothies or hide things from my kids (heehee) so that we all get more nutrition, here are a few ideas

Maca

Spirulina

Meta Greens

Aloe

or anything else you feel  or like to add in as blending it in a smoothie makes it easier to digest and gest in our system faster!

Eggless Nog

21/2 cups almonds soaked overnight or a couple of hours (or brazil nuts)

4 dates

3 tbsp honey

1/2 tsp vanilla

2 cups water

cinnamon

nutmeg

cloves to taste

Put all ingredients in your blender and blend up well.

Strain through nut bag and enjoy.

Raw Shortbread Cookies

Shortbread cookies used to be one of my favorite treats around the holidays.  Memories of making them and sugar cookies with my mom when I was little always brings a smile to my face.  Wanted to try something different this year so here is what I came up with, I think this could be as close as I can get to the real thing.

Raw Shortbread Cookies                                                                                                

This recipe is actually made with chocolate but you can make them plain.

2 cups almonds

Add hot water and let sit for a couple of minutes, drain and removes the skins.

1/2 cup coconut oil

1 tsp vanilla

1/2 cup raw cocoa powder (or omit this and add 1/2 cup more almonds)

Pat almonds dry and put in processor and process until fine.

Put all ingredients in a bowl and mix with a hand mixer for a couple of minutes.

Drop onto dehydrator sheets with the teflex and dehydrate overnight

Remove and keep in refridgerator.

Enjoy!!

Day 1

Ok, Ok, things didn’t work out as planned today……had some computer glitches, and software glitches, (hence no video) and a little family emergency……..so this is out late and I apologize for that.
BUT

12 Days of Christmas Giveaways!!!!

Sometimes things in life change, so since this is a new beginning for me, I have decided to start it with a bang!!!

Starting December 1, 2010, every 2 days, we are going to be giving away some neat things, that will help you stay eating healthy, through the holidays as the 12 Days of Christmas Giveaways!!!.

We will be sharing some good tips, recipes, inspiration and maybe a laugh or two and even some good Christmas cheer as we gear up towards the big day and try and maintain eating somewhat healthy and being balanced not stressed.

Something different each time and there are some pretty cool things, if I do say so myself!!

Kelp Noodles

I have been having a thing lately for Kelp Noodles.  They aren’t easy to find, at least where I live, so I order them on line from Real Raw Food in BC here, but you might have better luck where you live.

I have been creating all sorts of fun dishes with them lately.  They don’t have a strong taste, yet have lots of minerals and they are somewhat crunchy, so you may not enjoy them, but they are raw.  You can always substitute the kelp noodles with zucchini or radish or whatever else you prefer.

What you will probably find over time or are finding, that the more raw meals you make and eat, the easier it becomes.  Not only in the making but also the clean up,  I am beginning to think that this is fast food!!

Kelp Noodle Spinach Pasta

Chop up a big handful of spinach and put in a bowl

Drizzle over spinach cold pressed sesame oil and a dash of salt. Mix together with your hand, sort of crunch the spinach. Set aside.

I will also take out the serving size of Kelp Noodles that I need and put it in a dish of very warm water, so that the noodles warm up a bit and aren’t cold.

Minced a clove of garlic and add to spinach.

Chop up 1 tomatoe, chop several kalamata black olives, I also added some hemp seeds, about 1 tbsp and chopped parsley, you can get creative and add more if you like, for instance red or orange pepper, green inion, mushrooms etc

Add into spinach and mix up.

Drain kelp noodles and put spinach mixture on top.

Enjoy!!

Very little clean up time and preperation time was probably less than 15 mins……..see what I mean!!

Raw Crackers

Raw Cracker Recipe

Grind 2 cups of Flax seeds in grinder and set aside (cleaned out coffee bean grinder works well)

Mix together

1 large onion finely chopped
2 – 4 cloves garlic
sea salt

3 stalks celery or other veggies that you like, or pulp from your juicer.
Mix together

Add in ground flax
Mix together and add

1 cup water

Mix together well.

You can add seasoning or herbs at this stage.
Mixture should be firm, but not too sticky or too dry. Depending on the amount of veggies or herbs added you may need to add a little more water.

Spread out evenly on the teflex sheets of a dehydrator to the thickness you desire.
Remember to score it.

Dehydrate (108 degrees or less) for about 4 hours, then flip the crackers over and take the teflex sheet off and dehydrate till the crispness you desire.

Get creative and Enjoy!!!

Macadamia Beet Dip

Macadamia Beet Dip

Easy, Healthy and Good!!

1-2 Beets chopped up (big chunks)

1/4 cup macadamia nuts

juice of 1 lemon

1 garlic clove

celtic sea salt to taste

Put everything in the blender or Vitamix and blend up till smooth.

Adjust to taste (maybe a little pinch more of salt or garlic).

Great for dipping endive leaves into, or flax cracker or carrots or whatever you choose!!

Cleansing Green Soup

I have been playing around with the basis of this soup with different vegetables, but the other night I made an amazing one, too bad I didn’t record the actual measurements.  I usually don’t measure, I just throw things in the blender!  But here is basically what I added, play a little with the quantities to your liking, but this soup is so good and full of lots of nutrients, enzymes and vitamins.

– big handful of spinach

-1/2 cup sprouts

-1 – 2 cloves of garlic

-juice of 1/2 lime

-pinch sea salt

-some dulse

-1/2 avocado

-approx 3/4 cup water (or Rejuvelac which is what I used and will be going into that next post)

some cilantro (or parsley or whatever else you would prefer)

Blend all up until a smooth consistency and garnish with chopped green onion or what you would like.

I found this soup to be very cleansing and energizing.  (After a long day at the mall with the girls!! lol)
