Marinated Portabella Mushroom

Marinated Portabella Mushroom with Creamy Dill Sauce – RAW!!

This is a fairly easy dish to make, it does require some marinating and a dehydrator.  If you don’t have a dehydrator you could use our oven at the lowest temperature.  Just remember anything heated over 115degrees usually gets cooked and it’s not raw then.

I used smaller sized Portabella Mushrooms in this recipes, but bigger ones can be used to, you just might need to substitute more marinade.

– 4 Portabella Mushrooms (small ones are still a good size) this served 2 people

– 3 tbsp cold pressed olive oil

– juice 1/2 lemon

– 2 tsp Tamari

– 1 organic Garlic minced

Mix all together in a bowl and add mushrooms, making sure they are coasted.  Toss or stir every so often, leave to marinate for 2 – 3 hours.

Once marinated, place in dehydrator and dehydrate for 4 – 5 hours.

Marinated & Dehydrated sliced mushroom.

Creamy Dill Sauce

– 1 cup raw Cashews

– 4 oz Water

– juice 1/2 Lemon

– 1 organic Garlic clove

– 1/2 tsp Celtic Sea Salt

– 1/4 – 1/2 cup organic Dill

Throw all ingredients into your Vitamix (blender or processor) and blend well until smooth.  A little more water may be added for desired consistency.  As you can tell I made my sauce a little on the thick side with just 4 oz of water.

Slice up Mushroom and place on plate and pour Creamy Dill Sauce on top, I added a little more dill which is optional.  This could also go on Zucchini noodles, pasta or rice but it tastes great on it’s own!!

This I served with a Quinoa Salad which the recipe will follow.

Have you ever really looked at that word and gave it some thought?

Diet………hmmm makes you wonder eh??

If you google diet, kinds of diets, type of diets……..OMG…..yet most of them are fads or we wouldn’t have so many of them.

Two things I have done to make my food experience better, well 3 but we’re going to talk about 2 here today and the third I’ll share shortly as they are all important I think.

One was to eliminate the word diet, as we know what word is in there and it’s restrictive.  When I restrict myself or tell myself I can’t or shouldn’t have that, well guess what?? You probably guess right!! I have the type of personality for the most part I don’t like to be told I can’t have something especially when it comes to food.  Now, I can choose not to want it or eat it which is totally different…..see what I mean?  There is no restriction but choice, big difference.

We all know inside it’s calories in calories out, the type of calories make a big difference.  If you are anything like me I don’t have time or care to count calories, just like texting I can’t keep track of how many give me unlimited please!!

Now that is not to say that is card blanche for go ahead eat anything and everything and lots of it, I just found it became easier and easier to let alot of unhealthy foods go and that need to overeat at times left too as I wasn’t denying myself anything. I gave myself permission to be.

When you clean up the way you eat, by eating healthier, whole foods, you don’t want those foods that have all the fat, calories and additives which are empty and nutritionally deprived.  Clean it up and get rid of the word ‘diet’, choose healthier eating, healthier living, healthier being or I’m eating for me……whatever works just stop using the word diet or I’m on a diet!!

The other thing I did along time ago, like before I had kids, was to throw out my scales.  Did I really need to know the number? Who cares?? I stopped looking at those numbers as we know how we feel in our bodies, in our clothes…..don’t we??  I used to weigh myself every day and alot of times not just once………talk about a mind f@%^*!!!!  Those numbers could mess with my head and make or break my day…..that is not the way it should be.

This time of the year my jeans get a little snugger, it’s winter, I’m not out as much I mean it’s dark by 4:30 here for a few months and I don’t do the gym thing really and that is how it works for me.  I didn’t say tight, I say snug. and I can live with that as I know it will come off shortly too once the spring is here.  We are like animals in some ways and need a little more fat in the cold months BUT I don’t need to see how much!! lol

Common sense here and doing things maybe differently.  Stop saying diet and if you find yourself weighing yourself often or you gt upset by the numbers on the scale, get rid of it.  Do you really need that type of anxiety??

Break the pattern……..make it a great and healthy day!!

Raw Chocolate Pudding

Raw Chocolate Pudding

Where I live I don’t get to find young coconuts very often so when I go into the big city (lol) and find them especially on sale I am in heaven.

If you haven’t tried one I highly recommend it.  Young coconuts, both the liquid and the meat is not only tasty but very nutritious and you can do lots with them.  I look so forward to being able to make smoothies out of them for my morning shakes.

Here is a simple, quick, healthy and oh so tasty treat.  Good when you are craving that sugar.

For a good serving you will need to coconuts for this recipe. You will need to take the top off the coconut, which you can find in an early post here on how to do that.  Be careful as the liquid will start to come out, so I don’t take the top fully off until after I drain the water.

Once drained, take the top off and then with a bigger spoon, scoop out the white meat.  There won’t be a lot and it’s not hard like a coconut you are used to seeing.

Put it into your Vitamix or blender.

Add in

2 tbsp Organic Cocoa Powder

2 tbsp Maple syrup (not raw) or Honey (not vegan) or Agave –  I tired using Stevia with this recipe and it just didn’t taste good I much prefer one of the others.

1/4 cup of the coconut water (approx) depending on how creamy or thick you ike it

vanilla  optional I like to throw in a little of the vanilla bean itself

Process until smooth

Some variations after processing it are adding in some Chia seed and  / or sliced up bananas or other fruit.

It’s yummy and takes care of those sweet cravings!!

Enjoy and please share this if you like it!!

Thank you

Raw / Vegan Green Soup

If after the holidays you are left feeling sluggish, a little heavy feeling, maybe a few extra pounds on as well, then this you may like.
I also know after the holidays of some over indulgents this may also seem boring, but you and your body will love you for it!!
It’s easy to make, quick, simple, healthy, tasty, nutritious , full of enzymes, vitamins and nutrients, and will help you lose that sluggish, tired and feeling a little full feeling!!

Great for lunches, light dinners or even a snack.

Green Soup

–  Big Handful of Organic (if possible) Spinach

–  1 chopped up Carrot

–  1 chopped up Celery stick

– 1 clove of Garlic

–  juice of 1/2 Lime (or Lemon)

– 1/2 cup Parsley

– sea salt to taste

–  1/2 Avocado

–  3/4 cup Water

Throw all ingredients into your Vitamix or blender and blend until smooth.  For more of a creaminess you can add the whole Avocado or cut back a little on the water, if you want it thinner add a little more water.

This is a guideline, but you can throw any vegetable in, but you want lots of greens….spinach , kale, collards etc and herbs….use any that you like.  Garlic and salt adjust to your liking……just don’t use table salt!!

If you want it warm, you can slight warm it on the stove, BUT do NOT heat it or boil it as it will kill all the nutrients, enzymes, vitamins and minerals.  We are programmed to eat HOT foods or think we need them and I know at times living in the rainforest here that I want warming foods……add spices like cumin, chili peppers etc to warm you up inside.

Experiment with the flavors and if you are needing to chew, when you’ve got the soup to how you like it, throw in a few veggies and just pulse for a min or two so you will have a chunky soup or have some crackers with it.

Super Smoothie

Ok, I finally got hit with the flu bug that has been going around our house for the last 10 days……ugh!!!

Someone usually says to me ‘Oh but I thought you ate so healthy?’………there is always room for improvement, I’m not perfect.

As I was reading Louise L Hay’s book this morning ‘You Can Heal Your Life’, under Influenza, I finally saw it…… influence.

What has been having obviously negative influence in my life??  Response to lots of negativity and fear.  Hmmmm, got me thinking, yup going through some  stuff right now… interesting, obviously I need to deal with it better!!!

Anyways, when my body isn’t feeling so good, I am a firm believer in listening to it and giving it foods, teas, juices etc to help it heal faster, and very little food.

This morning I had the pleasure of having a young coconut.  When I get into Vancouver and Commercial Dr. I bring back a few as I can’t get any here and they are so good for you.

I’ve added some photos of a young coconut as it’s not the one’s you usually see.  It is also easy to take the top off, if I can do it, so can you!!

Super Smoothie

coconut water of 1 young coconut

flesh of one young coconut

1 banana

1 pear

1 kiwi

big handful of spinach

small handful of parsley

approx 1/2 cup blueberries

1 tsp Maca powder

1 tsp Spirulina

1 tsp Bee Pollen

2 Tbsp Hemp seed

Blend up, makes about 2 big cups, drink and enjoy.

It did help me get through the day!!

Apple – Pear Green Smoothie

Here is another variety for a Green Smoothie, that I think is yummy!!

1 organic Apple – peeled & cut up a litte

1 organic Pear – peeled & cut up a little

Big handful of Spinach (that is my favorite but Kale or any other greens are fine)

1/2 Avocado

1 Banana ( I usually use a frozen one for this recipe but it doesn’t have to be)

1 tsp Bee Pollen (optional)

Spring water, depending on how thick or thin you want it will depend on how much water you add.  Because of the avocado, it is more of a creamy almost type of smoothie, so I added maybe 1 cup of water, start there and adjust to your liking.

Blend up, drink, enjoy and feel alive!!!

Raw Foods and Holidays

It is Thanksgiving weekend here in Canada and as I am writing this I am looking out my window into the rain forest and it is rainy and windy……..and suppose to be like this all weekend.

I am ok with that, as today I am off to the Fall Faire here, where I will have raw foods for people to demo.

The rest of the weekend, w ith this weather, will be spent hibernating and time in my kitchen making some dishes for our feast on Monday with some family and good friends.  I will post next week some of the recipes I made, as you know me, I like to switch them up to my taste, sorry I didn’t do it before the holidays this time!!

In the past I have been able to add raw foods to the festive dinners and they have been quite tasty, I have even been surprised as you can make things to substitute what we have been eating for years, with raw foods and you don’t feel deprived at all.  Of course, that is also a mind set, but your taste buds are all satisfied.

If you decide that it’s the holidays and you’re going just eat whatever (as you may be the only person who is eating raw), then don’t beat yourself up about it.  Sometimes those toxic emotions (guilt, shame, anger etc) do more harm than actually eating the food!!!  I have been the only person before at holiday times eating raw foods, and some people tried it and were surprised at how good it tasted.  And I also found that I didn’t miss the old traditional foods at all.

You may not have the time to be making two dishes of everything, you may choose to spend quality time with people who are dear to you and you don’t see very often.  You may just prefer to be in the moment.  You may not be ready to do holiday raw dinners yet. Or……..

Whatever it is, be present, have fun, enjoy the moment, have gratitude and do what feels right………for you.

Remember, there are no rules……..only self love!!!

Have an awesome day!!!

Real Raw Chocolate…….Yum!!!

All chocolate is made from the cacao bean (or cocoa bean).

Cacao is chocolate.

Since I have been on a bit of a raw cheesecake exploratory lately, and my family and friends are loving it!!!  I have been using cacao is some form or another in them and they have been tasty, but it is also good to know that real raw cacao has many health benefits as well.

So, here is some info on cacao.  It is the seed or nut of the fruit from the tree it grows on.  They are always in season and like to grow in  temperatures above 60 degrees F with little fluctuations of high humidity.

Way back when, the Cacao beans were used instead of Gold for money by the Mayans and Aztecs.

1879 was when the first milk chocolate bar was produced.

But, that is probably the start of when things changed. Cacao has a high mineral content but it is destroyed when cooked, heated, refined and processed.

Cacao contains the highest concentration of antioxidants of any food in the world, more than (by weight) red wine, (shucks), blue berries, acai, pomegrantes and goji berries combined.

Cacao is the #1 source of magnesium, which is the most deficient major mineral on the SAD (Standard American Diet).

Cacao also contains iron, chromium, manganese, zinc, copper, Vitamin C, Omega 6, Phenylethylamine (PEA), which is not present in processed or cooked, that is the chemicals we produce in our bodies when we fall in love!! Also, anandamide, tryptophan, serotonin, fiber just to name a few.

Most of this is lost when we process, heat and cook cacao.

Because of the nutritional density, it is considered a Superfood by some.

From cacao beans you can get cacao nibs, powder, butter and paste that can go into bars, cheesecakes, beverages, trail mixes, drinks and smoothies.

So, if it’s raw cacao…… is good for you, but like anything, remember in moderation.  You will find the taste slightly bitter at first if you eat a nib on it’s own, but after awhile, if you try one of your old favorite chocolate bars……..taste like junk, fake, yuck!

That last  cheesecake I made was a banana chocolate one and boy was it good!!!

Finally, some chocolate that is good for us!!  David Wolfe thinks so………

Marinated Veggies Unpasta

Marinated Veggie Unpasta

It’s unpasta as you know we can use vegetables even for that!!

1/4 cup Expeller Pressed Toasted Sesame Oil (probably not raw but nice flavor)

juice 1/2 lemon

minced garlic 1 -2 cloves

some chopped parsley or cilantro (optional)

pinch sea salt

Chop up a mixture of veggies, I used

1 red pepper

approx 1 cup spinach

1 – 2 tomatoes (depending on size)

a portabello mushroom

Toss all together and add marinade

Depending on the amount of people eating, adjust the amounts of veggies and marinade.

Let sit for 2 – 3 hours.

Using a Spiroli, make pasta noodles out of zucchini.

Put the marinades veggies on zucchin and garnish if you desire with chopped green onions.
