Not sure if you know or not, but over the course of the last 10 years, I wrote some ebooks  / kindle books along the way.

They coincide with different stages in my life, being into energy therapies, vegan / raw foods, holistic health,  alternative things, yoga, photography, spirituality, EFT ( & many other modalities), akashic records and deeper diving into consciousness, creativity, the cosmos and yes conspiracy theories .

There are several EFT books to share how you do it and how you can use it as it’s a great tool for anyone.

When I was big into healthy eating as in vegan / raw and superfoods, I got creative in the kitchen and at the same time wanting to get back into my photography, so creating recipe books / blog posts was a great combo.  I created a Vegan recipe book, Raw Food recipes and Healthy Eating Made Easy, which is  three books in one.

Then I was big into Yoga and wanted to find out what drew people to Yoga, so with over 65 Yogi’s why and photos, I created another ebook combining my love for Photography and Yoga – Why We Do Yoga.

Then I was reading, studying and learning about energy, the universe, who are we, the matrix, the lies aka jumping down lots of rabbit holes and at the same time learning many different alternative modalities, yet getting so far in the training and knowing there was something else, something more and I kept being open and sure enough it was when this book A Story of Our Souls – Remembering Love came as a download out of no where.  I never planned on writing a book, yet again I got to incorporate my photography into the adult story book.  You can get the first 3 chapters for free to see if you even like the book first!!

On the burner is yet another one, a short one where we dive into energy, frequencies and vibration so we can help in creating a new, higher vibrational earth aka Heaven on Earth.  Possible?? You bet, but it’s beyond this reality.  When we start looking at everything as energy, then change happens.  It will be out shortly and it will be for FREE.  Then that is it I am sure as art, as in Encaustic, has been calling me more and more!!  It truly is a time to listen to the imprints we are getting from our souls and move more in that direction.

You probably don’t know that I have created and written 6 ebookskindle.

I know right??!!

From food to yoga to our souls!!

 

The first ones were Eating Healthy Made Easy   (now Free0 and Raw and Vegan recipe books that are easy and tasty (& all in 1 book as well), when I was being a big foodie.  The cool part is it got me back into Photography as I was creating food recipes for my blog.  I also get featured in a few other books by other people because of some of the recipes.

 

 

 

 

 

Then I also created a Food & You – Choose You book, as I struggled for many years with such low self esteem and an eating disorder and these are some of the tools I used to overcome them and come back to more of me plus I also to use some of my photos again! 🙂

Then, when I did Yoga teacher training, which came at a very difficult time in my life, yet also ended up being the perfect time and helped me big time so I thought why not photograph a bunch of Yogi’s and find out Why (They) We Do Yoga – hence the name of the book.  There are over 60 Yogi’s with 60 different whys ad you  may be surprised at some of them!!

In my time of going thru the dark night of the ego I call it 🙂 I am allowing more and more creativity coming out.  We are creative beings as our truth and when we learn to creatively express who we are – it’s way more fun!!

Have you every thought of or eaten Raw Popcorn?

It’s probably not what you think!!

I was going through my kindle and ebooks that I have on line and realized I had not added many photos – WTH??  So I have been updating them and they are ready with many more photos that I had and never added in.  While I was going through many of the food photos I have I realized I still had recipes that I had not shared – this is one of them!  (btw if you would like a free copy of one of my recipe books please reach out to me right now)

Anyone that knows me knows that with a good movie I love a bowl  – and I mean a BIG bowl of Popcorn!!

I am a popcorn pig – there I said it!! 🙂

Now a days the one thing that is really important is to make sure the popcorn is Non-Gmo!!

Now Raw Popcorn really isn’t the same as just Popcorn but it is good and if you are wanting to have more raw foods or love Cauliflower then you will love it – yes Cauliflower!!

This recipe is simple, easy, fast and tasty – no measuring required!!

1 head (or any amount) of Cauliflower cut up into any size you would like

You can add in some Coconut oil if you like but not necessary – if you do slightly warm it so that it is melted and the rest will stick better

Nutritional Yeast

Himalayan Salt

Spirulina (again optional)

any other tasty things you like on your popcorn

The easiest way I find of mixing it all together is to put it in a big freezer bag and shake it up together – or you can just put all the ingredients in a bowl and mix them that way – whatever works best for you.

That’s it – seriously!!

It’s been quite awhile since I have done a recipe so thought it might be fun to create something simple, yet fresh, raw and oh so tasty – Jicama & Beet Salad.

Since being down in Mexico I have been eating so well.  For me, I know the warmth, sunlight and fresh foods nurture my soul.  There is an abundance of fresh foods down here besides just Tacos and Quesadillas!! lol

Fresh Foods

There are also many markets that happen happen several times a week in different locations where an abundance of not only fresh / raw foods, but tasty (from vendors) and organic.  Usually more so where the gringos are yet so much great food.

I’ve been living off much Papaya, Pineapple, Figs, Avocados, Fresh Greens and yes I admit it fresh salsa and chips – locally made and non-gmo.

I truly feel for many people that the environment makes a huge difference.  I know for myself while living in Vancouver and it was damp and raining a lot it was harder for me to eat as much raw foods as I do now – my body wanted and needed some cooked foods like Quinoa and roasted veggies.  Here I never think of that.  In sharing that – when you eat clean, your body will let you know what it truly wants – honour that.  There are too many people out there dictating that it has to be a certain way.  Yes eat healthy but listen to YOUR body!!

Vegan, Gluten Free, Organic Foods

Energy is everything – if you are hating what you are eating and eating because you think you should or have been told to – you are actually doing more damage!!

The one thing that makes me kind of sad down here is the NA influence like Coca Cola is everywhere, and some other nasty treats yet isn’t it everywhere now unfortunately??  Corporate greed is all I can say on that one as it is not food – only chemical concoctions labelled as food and creates havoc in the body!!

Lots of Raw Cacao – Good for opening Pineal Gland, Kombucha & this Raw Sauerkraut is sooo good – she makes amazing stuff!

Jicama, Beets & Greens – Colorful Mexico

I love Jicama and Beets especially together.

This is a Raw and Vegan recipe.

The selection of organic greens at the market is incredible – the one table sells about 8 different kinds and you get to mix and match and filler bag.

I chopped them all up to mouth size and grated up the Jicama (which isn’t as sturdy as Beets to do so) and also Beets.

I also did a second dish of just Jicama and Beets chopped up together. I also finely chopped up Tumeric thinking the color would be cool (orange with the white and red but as we know beets take over!)

I have been on a Basil kick lately as I have been getting it fresh from the market and it is sooo tasty with garlic of course.

So it’s like a Pesto but no nuts – lots of Basil, Garlic, cold pressed Olive Oil, pinch of Himalayan Sea Salt, I also added in a mixture of Sea Veggies (dried that I brought from Canada) and Irish Moss – good for collagen (trying to add it in more in my way of eating) but those two are optional.

Of course since being here once I put it on the salad or just the Jicama & Beet salad I also squeeze fresh Lime juice!

In the Jicama and Beet Salad I added in a bunch of Dill too.  I let that one sit in the fridge for a couple of hours (ok while I went to the beach :)) to let the flavours marinate.  Now you can use any herbs and I always find that fresh is smooch tastier and better.

It was a tasty delight.

The salad feel free to sprinkle on some toasted Sunflower seeds or Pecans or even add in Avocado and a sprinkle of Nutritional Yeast.

Jicama doesn’t get used often enough and is very mild tasting so really takes on flavours of there ingredients.  Jicama is abundant down her in Mexico and has many vital nutrients and lots of fibre and probiotic role in the intestines.

I am so loving being in Mexico!!

Raw Lime Superfood Cheesecakes

 

Deserts don’t have to be taboo, full of crap or uninteresting!

Raw Cheesecake tastes amazing, most people cannot tell that it’s raw. Raw Lime Cheesecake is not one of those that is too sweet tasting and by adding in some Superfoods of course healthy too yet undetectable!

Instead of a big cheesecake I decided to make cupcake style ones and threw in a little hemp too to make little healthier. Many raw food deserts are dense – but aren’t many good deserts (lol). It’s just nice knowing that you can have a sweet and it doesn’t have to be unhealthy, taste bad or have no or little nutritional value.

Limes

 

You could use lemon instead of lime – I just so love the smell of fresh limes!!

This recipes makes 1 full muffin tin tray of the cakes – I found it easy to put the paper in there (easier to remove). You could also just make one cheesecake if you desired!!

Crust

– 1 cup raw Almonds

– 1/4 cup Hemp seeds

– 1/2 cup Madjool dates (pits removed)

– 1 tsp Vanilla

– pinch Himalayan Sea Salt

Put the Almonds in a food processor (or Vitamix) and process till almost fine. Throw in the other ingredient and process until a ball forms or it’s sticky enough to stick together.

Press in the bottom of the paper cups (that are in the muffin tin tray) to the thickness you desire but make sure it’s pressed together firm – you don’t want it falling apart as you eat it.

Raw Lime Superfood Cheesecakes

Cheesecake

– 11/2 cup raw Cashews

Throw raw Cashews into the Vitamix (or blender) and process first on their own a bit, not necessary but I find it makes it smoother faster.

Add in

– 1/4 cup Hemp seeds

1/4 cup L.O.V. Plain (optional and it is a Purium product, if omitted add in a few more Cashews or Hemp – 1/8 cup approx)

– 3 tbsp cold pressed Coconut Oil

– 1/2 cup nut Mylk (Almond, Hemp, Cashew – your choice!)

– 1/2 cup fresh Lime juice

– 2 – 3 tbsp Honey or Agave (your choice, I used 2 tbsp but you may like it a tad sweeter with the lime juice)

Blend all ingredients together until smooth, pour into each cupcake / muffin tin or paper (or cheesecake pan). I tap the container on the counter a few times to get air bubbles out if there are any.

Put in fridge or freezer to chill. From the freezer it’s more like an ice cream – either way is good. I would eat these within 2 days.

When I was a kid we got to choose our cereal that we ate in the mornings – little was known about real health back then and I am embarrassed to say my favourite was Count Chocola – seriously eh? My brother’s was Frankenberry – I know beyond a shadow of a doubt my kids never got that crap from me and I doubt my brother’s kids do either.  Some of us have come a long way and yet it saddens me when I walk down the isles of the grocery stores and I see the crap for kids these days, and how advertising targets them.

There are other choices.  I promise in the very near future I will write a post on some of the properties of some of the Superfoods I choose to add into my way of eating.  When you know this information, it’s hard to go back to nutrient void, chemically processed, man made empty, carbon like cereals or foods.  We eat to live not live to eat, and it really does not have to be hard, boring or expensive.

One of the best things I can share with you about eating real foods, healthy foods and superfoods is it feeds the body.  When it feeds the body you actually require less or eat less food as the body is satisfied.  If we are over eating its usually one of three things, we are nutritionally starved, we are emotionally eating or we are so distracted we aren’t paying attention (i.e. watching tv while eating) and are disconnected not only to our food and ourselves but also our bodies.

Conscious eating is eating – enjoying and tasting the food,(no the, computer or cell phones around) having great conversation (anything negative should be spoken later on), slowly chewing each mouthful so you taste the food, digest it properly and are present.

This Chia Cereal is easy to make and one can get quite creative with it – you’re only limited by your imagination!

–  1/4 cup Chia seeds

–  1 cup Nut Mylk

Put the Chia seeds in the nut Mylk and let sit for at least an hour.  You can also put it in the refrigerator over night.  You may want to add a little more nut Mylk to get the desired thickness or consistency.

It’s at the point when I add in the rest – in this recipe I added in

–  Hemp Seeds

–  Fruit (Pomegranates)

–  Pumpkin Seeds

–  Almonds

–  Rice Bran Solubles (Purium)

Vanilla, Cinnamon and a pinch of Himalayan Sea Salt

But you can add in  some fun spices like Cardamon, Maple etc  You can add in shredded Coconut, other nuts, Goji Berries, Raw Cacao, or you could even make it with a Chocolate nut Mylk (kids might like it or think you went a little nuts 🙂

I choose Pomegranates to stick with the color red for the festive season but you could add any kind of fruit.

Not only is this a tasty healthy cereal, it has a fair amount of nutrition in it, so for kids its awesome and will stick with them for awhile.
