Love the summer months when everything is fresh and easy to eat more raw foods, more vegan foods and it tastes even better as most of it can be grown in your area – yummy!!
I love this recipe – and it can be changed up a few different ways, but here is one to get you started. This recipe is pretty quick and easy and of course tasty too – don’t be afraid to adjust amounts of things for your taste or add in some different herbs or spices.
– 1 cup raw Walnuts
– ½ cup fresh Parsley
– 1 tbsp Braggs or Tamari
– 1/2 cup fresh Cilantro (if you really don’t like Cilantro use Parsley)
– juice of 1/2 Lemon
– 1 minced Garlic clove
Throw all ingredients into a food processor and process until desired consistency (you can leave it rather chunky or more smooth which just needs more processing – I usually go in the middle somewhere so there is a little bit of chunks of nut)
For these tacos I used the outer (as they are usually bigger) of Green Cabbage leaves
I chopped up some extra Cilantro, chopped Tomatoes, sliced Avocados, added a little Hot Sauce and topped with Alfalfa Sprouts and rolled it up.
Healthy eating doesn’t get much easier – enjoy!

I had the privilege of being at my friends house the other day who just gave birth to a beautiful baby boy.
He was only, not even 2 days old and he was born the day before my birthday, so another Sagg is in the world and we rock!!!!
Jane looked beautiful too, and as moms we know what your body goes through, but she really did.
It really got me thinking though, about how precious life is. How we all come into the world totally dependent and I believe pure and innocent and through our parents, teachers and friends things change. Don’t get me wrong, people mean well, but ideas, beliefs, what we should be doing are put at us and we morph and change and grow up into adults, where I see that we become disconnected and unsure.
We’re not always sure who we are, what we want or what we should be doing. We get caught up in the material side of things as we are inendated with commercials about it never being good enough, big enough, small enough, fast enough or new enough no matter what it is. We have models on tons of magazines that have a ton of make up and have been photoshoped till they are no longer recognizable……..go figure. It’s everywhere saying ‘You’re not good enough just as you are’.
But you are!!!
And the good news is we can choose to start over any time. Whether it’s our diets, I really don’t like that word, so way of eating, lifestyle, our jobs or how we choose to spend our time, how much money we make, who our friends are, where we live and even who we are married to.
Sometimes endings have to happen to have new beginnings.
I leave you with this thought, are you doing, being, having and feeling what is really inside of you? Your passions, are they still inside waiting to come out, are you nurturing them or do you even remember what they are?
Does your life look like ground hog day? Is it one of quiet desperation? Or are you living, walking and feeling your truth, in your power and loving each moment and what is?
We are coming up to Winter Solstice, the full moon and a lunar eclipse all on the 21st of December, which will also be the shortest day of the year. It will be a good time to go in, reflect, ask yourself some really good questions and set your intentions for 2011, whether it be your relationships, health, your job or life in general.
Remember, everything is energy and we create what we think about. As The Universe tells us in their daily notes, Thoughts Become Things so Choose the Good Ones!!!!

Ok, I finally got hit with the flu bug that has been going around our house for the last 10 days……ugh!!!
Someone usually says to me ‘Oh but I thought you ate so healthy?’………there is always room for improvement, I’m not perfect.
As I was reading Louise L Hay’sbook this morning ‘You Can Heal Your Life’, under Influenza, I finally saw it…… influence.
What has been having obviously negative influence in my life?? Response to lots of negativity and fear. Hmmmm, got me thinking, yup going through some stuff right now…..how interesting, obviously I need to deal with it better!!!
Anyways, when my body isn’t feeling so good, I am a firm believer in listening to it and giving it foods, teas, juices etc to help it heal faster, and very little food.
This morning I had the pleasure of having a young coconut. When I get into Vancouver and Commercial Dr. I bring back a few as I can’t get any here and they are so good for you.
I’ve added some photos of a young coconut as it’s not the one’s you usually see. It is also easy to take the top off, if I can do it, so can you!!
coconut water of 1 young coconut
flesh of one young coconut
big handful of spinach
small handful of parsley
approx 1/2 cup blueberries
1 tsp Maca powder
1 tsp Spirulina
1 tsp Bee Pollen
2 Tbsp Hemp seed
Blend up, makes about 2 big cups, drink and enjoy.
OMG!! This is sooooo good, you won’t believe it’s raw!!!!
Chocolate Swirl Cheesecake
1 cup almonds (dry)
3/4 cups pecans (dry)
1 – 2 tsp vanilla
pinch sea salt
Put all together in a food processor and blend till still chunky yet will stick together. Put into a spring form pan or glass oblong dish. Spread out evenly and press down, I used the back of a spatula. Press firm but not too hard.
3 cups raw cashews (soaked at least approx 4 hours if you are using whole, if pieces you can soak less time)
squeeze 1/2 lemon
3/4 cup honey
2 tbsp lecithin
2 tsp vanilla
1/2 cup coconut oil
1/4 cup cacao butter melted down
Put all together in a Vitamix or blender. I recommend if using a blender to put all ingredients together in a bowl, mix up then put 1/3 of the mixture in the blender at a time and blend till smooth (if you use all of it at once it may be too much on a blender). When the mixture is smooth pour on top of crust.
Now with the last 1/3 of the mixture, add 3 – 4 tbsp of cacao powder and blend up until smooth, then pour on top of the white mixture in the middle. With a chopstick or something similar , insert it in the mixture and begin to move it around to make a swirl. It is important to know when to stop, but practice will get you better at it.
Put into freezer for a couple of hours and then it can hold in fridge if you prefer. I found that it was better in the freezer as it was almost tasted like an ice cream cake and in the fridge it was a bit soft. If you would like to keep it in the fridge instead that is fine but it will be softer, you can also increase the cacao butter to 1/2 cup and the coconut oil decrease to 1/4 cup and then it will hold in the fridge better. Either way, it is yummy!!!
