I believe once you get use to the simple and tasty raw / vegan version of a cream sauce you might just never go back to the dairy one!!
I used Kelp Noodles for this recipe, but whether it is Zucchini noodles or regular pasta, it will still be tasty!!
Kelp noodles are harder to find, any local health food store that has a fair amount of raw foods may sell it. I usually order mine on line so I order a few packs at a time as they keep well in the fridge. You can serve them right out of the package cold or put in a dish or warm to hot water to warm them up. They are loaded with nutrition and lots of minerals, are crunchy and don’t really have a strong taste but I like them – it makes regular pasta seem mushy.
– 11/2 cups chopped Mushrooms ( I used regular mushrooms but any can be used as they will give a different flavor)
Put into a bowl with
– 1 tbsp Tamari
– 2 tbsp Olive oil
– sprinkle Sea salt
Mix well and let marinate for a few hours (2 – 4 hours) stirring occassionally
In the Vitamix or blender
– 11/2 cups raw Cashews
– 2 cloves Garlic
– Pepper ( I like a mushroom / pepper sauce so I added a fair bit but add to your liking)
– 6 – 8 oz of water – start with 6 oz and slowly add more depending on how thick or thin you like your sauce (so you may need to add a little more, just add a little bit at a time while the blender is mixing)
Once your sauce is smooth, throw in 3/4 of the mushrooms and keep blending – this sauce I made smooth so I blended it up well, but you can also leave the mushrooms chunky, you will need to process less.
Pour the sauce over the noodles, add a few of the remaining noodles on top, garnish and enjoy!!
Our bodies talk to us all the time, we only really hear it or listen (maybe even then) when it is screaming at us in pain.
Did you know our body is actually communicating with us ALL the time?
Do you know who we are isn’t really our body?
What do I really mean by that?
Lets take a house as an example – you live in a house (or apartment, condo, tent whatever), you decorate it, maybe paint it, add a reno here or there etc. Just like a house – our souls or beings are living in a body, but we aren’t really our bodies I know, it kind of seems weird but stay with me here. If we started talking to our bodies more often – it’s incredible the feedback and guidance we can receive.
But think about it, how often do you have a ‘gut feeling’ about something?
How often have you walked into a situation and your body told you “Get Out’ or ‘Yes I want more of it” ……get the picture??
How often do you hear that whisper, that nudging, that inner guidance to do something, go somewhere, call someone etc……how often do you listen to it?? When you do what happens?? Probably some good things. How often have you not listened to it and then caught yourself saying or thinking ‘Oh man I should have……?’
Think about it for a minute.
How about taking it a bit further.
By talking to your body and asking it questions every day – all the time……do you think that would open up some things?
I mean we are really good at criticizing it aren’t we??
My thighs are too big, my butt is too lumpy, my back hurts, I need to lose weight blah blah blah – you are talking to it then!!!
Instead ask it things like –
‘Body what would you like to eat right now?’
Body are you hungry or thirsty?
Body what would make you feel good right now?
Body what type of clothing would you like to feel today?
Body what do you want to wear today?
Body how can I better communicate with you today?
Sounds weird I know but guess what…….it works!!!
This is coming from someone who has spent little time in her body in this lifetime, how do I know that?
If you are busy thinking about the past, the future, what you could have or should have said, day dreaming, trying to figure things out, etc you are not in your body very often……you are in your head more!
Try talking to your body today and giving it what it wants……you might be quite surprised at the outcome!!!
I have been participating in these classes lately so I can move through some of my own stuff, but also it’s the coolest thing I have ever come across and have become a facilitator in the basic process and can’t wait to learn more and to share it, but I have to be honest – it is and has been pushing all my buttons in regards to food.
What if there is no good or bad, right or wrong foods – it’s just a point of view. A point of view that someone had and started sharing it others like me, maybe you have taken on points of view as well, that is leading us to have a judgment, conclusion or make a decision about what is good or bad, right or wrong??
And it keeps getting better!!
I have been really looking at all my stuff around food – what I should, could and can’t or shouldn’t eat, and like wow it’s kind of f*^% up!!! I’ve had some interesting point of views let me tell you!! I have also been asking alot of who’s stuff is it – as I have had a tremendous amount of guilt about eating alot of things – that ain’t healthy!!!!
Everything is energy, especially our emotions and if we’re feeling guilty, shameful or anything else that really is negative or anything that doesn’t leave us feeling great, vibrating joy – about what we are eating, well that just does more damage. If we are restricting or denying ourselves, that isn’t healthy either.
What if we really started listening and talking to our bodies and asking it what it really wanted to eat? Or do? How different would that be…..without any feelings of guilt or shame or I don’t have time or any other yeah but’s????
Just a new or different point of view I thought I would share with you…..remember a truth will feel lighter, a lie heavier……so how do you feel about this??

Kind of like the Greek ones, still tasty and totally raw!!!
1/4 cup Macademia nuts
Put into processor and process until crumbly but not fine, still quite coarse.
In a bowl mix together –
1/4 cup finely chopped Dill
1 red Pepper finely chopped
1/2 cup Sundried Tomatoes – if it’s in oil add in some oil approx 2 tbsp if not in oil add 2 tbsp cold pressed Olive oil
1 tsp finely chopped (or dried) Mint
pinch Sea salt
juice 1/2 Lemon
Mix together well, add in processed Macadamia nuts
Collard Green leaves – need to cut them off from the stem (as seen below) to make the ‘wine leaf’ wrapper.
Once you have cut away a leaf, flip it over so the back is up (you can do it the other way as well, but I found doing it this way it rolls easier), add a good heaping tbsp of the mixture in the middle and fold over and roll up.
I find the ends hard to tuck in, you can try it though!!
This is good on it’s own as a snack, side dish or with Tzatziki dip!!!
You can do so much with tomatoes and depending on the time of year the taste can be beyond words!!!
This recipes is easy and tasty.
Of course I used the Spiralizer to make the Zucchini noodles, which you can find on the Shop page or your local health food might sell it if they have carry raw foods there.
– 1 cup Sundried Tomatoes – they add a nice flavor and can be found in most stores, I didn’t use the ones soaked in oil and I soaked them in water for about an hour, anything longer than 10 minutes should be fine
– 2 – 3 Tomatoes Roma, depending on the size of them
– 2 cloves of Garlic
– 1/2 tsp Sea Salt
– juice of 1/2 Lemon
– 8 – 10 Basil Leaves
– Pepper to taste
Drain the Sundired Tomatoes and put all ingredients in the Vitamix (or Blender) process until the desired consistency is achieved, if you like it kind of chunky or really smooth, it is good both ways!!
Pour over your Zucchini noodles (or pasta) and garnish and serve immediately. Serves 2

Let’s start off by defining what Vegan & Raw are, found on line –
Veganism is the practice of abstaining from the use of animal products. Ethical vegans reject the commodity status of animals and the use of animal products for any purpose, while dietary vegans (or strict vegetarians) eliminate them from their diet only
In other words they don’t eat (and for some use) anything from an animal……no meat, fish, dairy, eggs, and sometimes honey.
Raw Foods- firstly Purely Raw Food is purely plant foods. Fruits, Vegetables, Greens, Nuts, Seeds, Grains, etc. No foods from animal sources. This means no dairy, eggs, or flesh. Raw food has never been subjected to heat over 38 degrees Celsius. This is also our body temperature. Anything that has been heated to above our own body temperature is dying because the enzymes, vitamins and minerals begin to deform and die at this temperature. Our bodies do not recognize cooked food as food at all. Instead cooked food is treated by our system as a toxin.
For some people that is just way too out there, doesn’t make sense or those types of people are just weird.
I am only going to talk about dietary things here, but if you think about this for example we are the only species that drinks another species milk…..why?
For meat we need to use a knife and fork, if we looked at animals in nature who are true carnivores, they teeth, mouths and digestive systems are set up completely different.
I could go on into ethical, environmental and in way more detail about health in general, but I will let some of the resources listed at the end of this blog do so as they will do it much better, I just wanted to present some info to you to maybe start you questioning some things along the way.
If we have all these diseases like stroke, cancer, diabetes, obesity, and I could go on, related to diet…….why not fix it with diet as well?
Instead we have all these medications which mask it. Now I am not bashing things here and I do believe that there is a time and place for that, but the definition of insanity is to keep doing the same thing over yet expecting different results.
Why would someone who has one of those issues not want to take responsibility or empower themselves and learn what they could about treating and fueling the body better, get to the root cause instead of putting a bandaid on it?
In my teens I used to drink a ton of milk, I loved milk, that is what I drank at every meal. I also had an ulcer by the time I was 18. Now I can’t blame it on milk, but I was living with my Aunt at the time inToronto, as I was in college and she took me to aNature Path Dr.who got me off milk immediately (I had to drink Goat’s milk instead and that actually cured me of drinking milk altogether) and in a short time my stomach settled way down, my ulcer healed. I have never been one to eat yogart, I just don’t like it. Cheese on the other hand I have liked, and good cheese has been a weakness for me, but I also know that it clogs me up, weighs me down and now that I really know what is in dairy, where it comes from……..I don’t miss it at all.

Our bodies after all are our best instruments and we should take great care of them if we want them to be around for a long time and living fully – it’s proven more of a whole foods, plant based diet rocks!!!
K, I will get off my soap box now, but I hope maybe this left you with some questions.

Why is it that we can be so good during the week and crash on the weekends?
Do we hold it all in and then expel on the weekend, letting go of anything and everything
Even when it comes to eating healthier.
Have we ever put the corrulation together of what we do and are doing each moment, each day to how we eat or relate to ourselves
By that I mean how many of us are really doing the things that we love, that our spirit whispers to us that are us down at soul level compared to what we think we should be doing, have to do or need to do.
Where does our soul fit in along the way?
It’s like we almost live 2 lives, one of holding on and one of letting go, chilaxing, quiet desperation. Then Monday comes again and we hold on, hold it in. We can restrict ourselves for the week, in many different ways but with food inparticular – no I can’t have that I’m on a diet or that is the wrong food group or I have to exercise 4 times this week as I ate way too much on the weekends, and then really let go and do / have whatever on the weekend. It sounds like restriction, demands, self criticism and never a feeling of being good enough.
We live in a world that we are constantly innedated with advertising telling us we aren’t good enough!!
What if we just let go and breathed.
Gotta pay the bills, dam I put on 5 lbs, my job needs me, my thighs are too fat, I’m not driving a nice enough car – blah blah blah,
I have asked or said to myself many times, we weren’t put on this planet to work 40 plus hours a week or work 40 plus hours a week at a job that doesn’t fulfil or isn’t in line with me, saps my energy or for a pay check
Yet I also know that some situations call for that as life and basic survival are way out of whack now.
Can you imagine if we were able to do what we love to do, or were good at or came easily to us how life could be different for each one of us and then how we presented ourselves to the world, to ourselves and each other……it would be much more in harmony.
Possibly the need to push the pain down with food would ease or stop all together – the need to numb ourselves on the weekend would stop, weekend what weekend? Life would just be lived each day all day, being present in the moment in the body……..so that the diet roller coast would stop, the self judgment, the stress, the denial, the pain…….we would be who we are meant to be right down at soul level.
What are you denying yourself?
What is whispering to you that you say one day, maybe but not now, or I can’t do / be / have that??
Who are you and what things do you love to have and do?
What is stopping you?
Come on now, really no excuses, no victims – what is stopping you?
Can you look in the mirror no matter what is going on in your life, how much you weigh, what you’re doing, where you are living, what you do for an income and say ‘hey you, I love you and you are enough?
Maybe today is the day!!

Do days go by, or weeks maybe even years……and you find yourself doing the same old same old?
Are you happy doing what you’re doing?
Do you drive the same way to work, eat the same breakfast or lunch every day, or is every Tuesday chicken and rice night, you know what I mean??
Took a little trip down to Florida for a few weeks, had some r & r, good times and my sister, Steph, and I decided to try Para Gliding…..something I always wanted to do. She asked and we were in the pick up van within 15 mins on our way.
If you ever thought about doing it….DO IT!!!!

But I didn’t let that stop me, besides 5 kids way younger than me did it!!

I haven’t posted for a couple of weeks as I had to fly home to Ontario for a little while and since then I have been left pondering a few things.
My family suffered a loss of someone very dear and quite young, actually the same age as my daughter, they were 2 months apart. My sister and I were pregnant at the same time.
It was his decision which is always the hardest and the saddest.
So many questions are left unanswered and I keep thinking what is there to our lives? What is the purpose? Why do some of us come and go quickly and others stay for a really long time? Why are we here? How can I make a difference in someones life…..even for a moment as we pass one another on the street and I give them a big smile, could that make a difference in their day? Probably, maybe, who knows but why not do it anyways.
I have the pleasure of each week tuning into Hans Christain King’s Modern Day Mysticism show and I always leave feeling so peaceful inside. Learning each week that we really are indeed spiritual beings having a human experience no matter what we are going through. The first time I heard his calming, soothing non-judgmental voice, it was an inner knowingness of some sort, like finding an old friend after a long absent.
I have gotten off the spiritual path and am now back embracing it. It helps to remind us when our days are full of stress, or things just aren’t going the way we had hoped or planned on, there is more to this thing called life.
I started this blog to help people eat healthier, try new different, healthier recipes and to talk about my journey with food. I kept feeling like I didn’t know what to share or how to say it and that something has been missing,……..now I know what to share and talk about, as I do have a story. I also learned while being back home that the recovery rate for people, especially women with an eating disorder is less than 30%……WTF??!!……I couldn’t believe it, that’s it?? That sucks!!!!
So, if my sharing my story, what I did and didn’t do that worked or didn’t work, reaches even just one person, then I will have made a difference…….it’s more than just about food. I feel so grateful that I am in that low percentage, but it’s time to raise it much higher.
It is now changing to Food to Nourish the Body, Mind and Soul – as they are all interconnected as we are. It’s still about food but oh so much more!!
