It’s been a little while since I have posted, been doing some travelling, focusing in on my business and really wanting to know the direction of my blog. How could I provide better and something different, as time passes I realize there are many similar blogs and recipes out there – how could I provide something different yet needed.
I love the fact that more and more people are waking up to real foods and live foods as I am seeing evidence of it in the grocery stores – one word of caution – DON”T believe everything you see on labels – especially words like ‘natural’ – it can be misleading as I am finding advertising and marketing – well – can be interesting!! Eat more real foods, live foods, and fresh foods in season!!
My tag line is Healthy is Cool – as much as I believe we need to be eating real foods clean foods as much as possible, I also highly believe in clean thoughts (easier when our food and our bodies are clean) and by that I mean empowering thoughts, more self love thoughts, aligning our energy with what we love to be doing – with who we really are. Not being in a state of anger, angst or frustration at people, ourselves or life. By not liking the food you eat yet you eat it as it’s suppose to be healthy, by not working a ‘job’ that you hate or is out of alignment with who you truly are, by not surrounding yourself with toxic, negative, drama loving people who bring you down or drain your energy!!
By being in total alignment with who and what you are about.
For me, it keeps getting easier and clearer – Entrepreneur, Superfoodie, Photographer – besides my kids, dog, beloved and friends – this is what fuels me, drives me, what I love to be, do and have and when I come from that place – it’s easy, fun and flowing. Now not each moment is perfect and I am only human – learning and making mistakes but I also love it!!
What better place to share than on my blog!!
After spending some time on my business, enjoying the sun, picnics and hanging with horses which was new to me and playing with so me superfood recipes it all started coming together!
So my recipes from now on are going to have more Super foods – what I love using and how you can incorporate more into your way of eating, what are they and why use them taking you more into plant based eating that is nutrient dense and healthy!
More Photography even outside of food and recipes and more thinking outside the box – life, job, being – I have really been untangling and questioning all the programming and advertising we have been fed our lives – and if you look around I don’t believe it’s working too well – so in other words a truth seeker – and breaking free from a Job if you feel you are entangled in one – life is too short to be spent chasing a pay check or doing something that does not fulfil you in any way shape or form, or better yet having to spend 8 hours a day with people you have nothing in common with………..so please come back for more and share this – and stop by and say hi – I love meeting new people and making connections with like minded people!!!
Anyways – on to the recipe – this one is easy, tasty and well get creative…….:)
Chic Pea Salad
1 cup Chic Peas soaked for 24 – 36 hrs then another 24 – 36 hrs rinsing them several times and letting them drain – there will be a sprout started
1 can Chic Peas (drained and rinsed) – still healthy and vegan just not raw
juice of 1 Lemon
2 – 4 Garlic cloves minced (depends on you – I like more Garlic for this one)
2 – 4 tbsp of cold pressed Oil – Olive is good, my favorite these days is Camelina
1 cup finely chopped Parsley
1 Onion finely chopped
Arugula chopped up
Mix all together
Pinch of Himalyan Sea Salt
In this recipe I also included chopped up Peppers, Dulse and Hemp.
I love to mix up the greens ie Spinach instead of Arugula as an example, or Green Onions, lots of herbs – it’s never the same dish twice except for the base of Lemon, Garlic, Oil and Chic Peas. So get creative and add lots of fresh, in season organic veggies and greens!!

This recipe almost tastes like shortbread but it’s totally raw! When you can create treats like this at Christmas time – you won’t miss the traditional cookies and snacks that are loaded with sugar!!! I love shortbread cookies but really try not to eat them – now I can and so can You!!!
– 2 cups Almond Flour – throw the almonds in to the Vitamix in the flour container and blend until a fine powder – I did leave the skins on – you can remove them if you choose.
– 1/4 cup Coconut Oil
– 1 tbsp raw Honey
– 1 tsp Maca (Superfood – optional)
Blend all ingredients together. It will almost look like thicker Almond butter
Place on wax paper and roll into a log like shape, wrap in the wax paper and store in fridge for 12 – 24 hours.
Take out and slice wedges – serve immediately otherwise they will soften for sure!!.

Just to be up front – this recipe does have several of thePurium products in it as you know it’s about Greens and Superfoods – but you can always substitute your own. These are tasty and will substain you for hours, so a great little snack to carry around and reach for when you get hungry, miss lunch or need a little boost!!
Superfoods Energy Balls
– 3 cups Dates
– 11/2 tbsp Ric Bran Solubles (Rice Bran Solubles are the most potent, nutrient-rich part of rice. They are amazing plant complexes that contain a wide variety of nutrients not found in other foods.)
– 1/2 cup Activated Barley (is a unique, complex carbohydrate from pre-sprouted grain that is digested slowly, providing energy and endurance for hours. It is a great source of immune-enhancing beta-glucan and has extremely low gluten content. It makes a great addition to any green drink.
– 1/4 cup Hemp
– 2 tsp Spirulina (has been widely regarded as nature’s most complete nutrient source. Purium’s Organic Spirulina is a rich, whole-food source of vegetarian protein, chlorophyll, essential amino acids, anti-oxidants, and vitamins.)
Optional is to add instead of the hemp or Cocoa Powder is L.O.V.E. – 1 tbsp – which will really knock the nutritional value sky high!!)
Throw all ingredients in a food process and process until it forms a ball. Then break off little pieces and roll into small balls.
You can also roll into shredded Coconut if you like. (both are shown in photos)
Keep in fridge in sealed container and will keep for a couple of weeks if sealed well.
Pop into a little baggie and throw in your purse, car, or fridge at work – great for an afternoon snack instead of coffee or sugary things!!

One of the things I do love is popcorn especially with a really good movie – which I don’t do often so it’s a treat. I always make sure its Organic so it’s non-gmo as corn is high on that list.
This though is a really good, nutritious and tasty treat substituting for popcorn that lets face it is just totally healthier period. It’s raw (not everyone agrees on nutritional yeast being raw) but totally vegan and gluten free for sure!!
When I used to go to the movies at a theatre it was a big treat for me to get popcorn and I would get a large and eat it myself – yes I do love popcorn!! Since cleaning up my way of eating, the last time I went to a real movie theatre and ate popcorn I felt it for 2 days in my system and felt horrible – bloated and just yucky – I seem to be more sensitive to chemical crap since cleaning things up lesson learned!!
My daughter came home this past winter after being at the movies and a couple of days later said the same thing to me – I try hard not to inflict my judgments on my kids so it was kind of neat to hear her say that and that she wouldn’t be eating popcorn at the movies again – which she hasn’t and she loves popcorn as much as I do!!
If you love popcorn too hope you enjoy this way – you may not the first time but it does grow on you!!
– 1 head Cauliflower chopped into small pieces
– Himalayan Sea Salt
– 1 – 11/2 tbsp Nutritional Yeast (good for B vit’s and found in health Food Stores and a lot of grocery stores now)
If you are wondering about having to give up some favorite foods or comfort foods – no need to worry any longer!!
This Raw Creamy Basil Sauce will help!! It is totally vegan, raw which means it’s live!!
Every time I make a dish like this I can’t believe how filling, yet satisfying it is and it’s still healthy and raw – how cool is that??
And again easy, quick and tasty – even better.
The one tool you will need is called a Spiralizer – yes sold on Amazon (no affiliate link) or by now easily available in your local health store possibly grocery store (depending maybe Whole Foods).
There are other kitchen tools that will create a pasta like noodle so if you have something else that works awesome!
One Zucchini, a good size one is enough for two good servings. It creates a fair amount of noodles – some long and some short. I have found since using Zucchini for noodles I could never go back and eat pasta especially with the after effects! 🙂
Raw Creamy Basil Sauce
– 1 cup Cashews
– juice of 1/2 Lemon
– pinch Himalayan Sea Salt
– fresh ground Pepper (optional)
– 2 cloves Garlic
– approx 6- 7 bigger Basil Leaves (more if you prefer)
– 1/2 – 1 cup Water
Through all ingredients in Vita mix or Blender with about 1/4 cup water, slowly adding more water until the desire consistency you prefer is met (more water will create a thinner sauce, less water it will be thicker)
Finely chop 2- 4 basil leaves and stir into the mixture or add in and pulse lightly once or twice.
Pour the sauce over the noodles and enjoy.
If everything comes right out of the fridge it will be colder, you can leave things out for a little bit to get more of a room temp.
